Meatless Burrito Using An Organic Sprouted Grain Tortilla

A meatless burrito in an organic sprouted grain tortilla would have been the last thing on my mind when I was stuffing meat and dairy down my throat. Now that I have switched completely to plant-based eating these kinds of meals are what I CRAVE!

Nutritional Information:

spinach - low in Saturated Fat, and very low in Cholesterol. A good source of Niacin and Zinc, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese. Since spinach is high in Sodium I recommend you don’t use any type of salt.

kale- low in Saturated Fat, and very low in Cholesterol. A good source of Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus, and a very good source of Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper and Manganese

corn – low in Saturated Fat, and very low in Cholesterol and Sodium.
white kidney beans – low in Saturated Fat and Sodium, and very low in Cholesterol. A good source of Vitamin B6, Pantothenic Acid, Iron, Magnesium, Phosphorus and Potassium, and a very good source of Protein, Vitamin C, Thiamin, Riboflavin, Niacin, Folate, Copper and Manganese.

onion- very low in Saturated Fat, Cholesterol and Sodium. A good source of Dietary Fiber, Vitamin B6, Folate, Potassium and Manganese, and a very good source of Vitamin C. Unfortunately a large portion of the calories come from sugars.

carrots- very low in Saturated Fat and Cholesterol. It is also a good source of Thiamin, Niacin, Vitamin B6, Folate and Manganese, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K and Potassium. A large portion of the calories in this food come from sugars.

extra virgin olive oil – very low in Cholesterol and Sodium. A good source of saturated fat for the vegetarians out there.
garlic – very low in Saturated Fat, Cholesterol and Sodium. A good source of Calcium, Phosphorus and Selenium, and a very good source of Vitamin C, Vitamin B6 and Manganese.

1/2 pound spinach

Meatless Burrito On An Organic Sprouted Grain Tortilla

1/2 pound kale

4 raw ears of corn

1/2 pound white kidney beans

half an onion diced

4 medium carrots diced

home made salsa

2 tbs extra virgin olive oil

3 cloves garlic minced

organic sprouted grain tortillas

Pour the olive oil into a heated wok, medium heat. Cut the corn off of the cob and add to oil along with the minced garlic and half of the onion. Save the other part of the onion to top with. While that is heating up and becoming more compact, dice the carrots and set to the side for a cold topping. Once the kale and spinach mixture has cooked to your desired texture removed from heat and lay out your tortillas. The next step is to add everything and chow down!
